In celebration of the USDA getting rid of that dang food pyramid that nobody seemed to understand and switching to this new simplified version of a properly distributed plate, I've made a resolution to cook meals at home much more than I have been doing.
Which is never.
So even if I did it once, it would still be an improvement.
See how I make things easy on myself?
I love how simple it is, but it looks boring. Sooooo, our meal last night was a happy adaptation of "my plate"
Eyebrows: One slice of whole wheat bread, ripped in half and placed at the top of the plate.
Eyes: 5 oz of spinach wilted in the microwave, mixed with about 3-4 oz of cream cheese and garlic, placed in the middle of 1/2 a chicken breast. Fold chicken breast in half and hold in place with toothpicks. Bake in oven at 350 degrees for about 20 min, add mozzarella cheese and broil for about 2 minutes. Place on upper 1/3 of plate.
Nose: One carrot placed vertically in the middle of plate.
Mouth: Packaged salad (Mediterranean mix combined with Spring mix is the best), cucumbers and tomatoes placed in a half moon shape on bottom portion of plate.
Also, the cute husband told me several different times to "watch out" so that I don't spill his fruit punch flavored crystal light (aka very red drink).
I'm proud to say that it wasn't me that created this mess,
but it was his elbow that knocked over his drink!
Our lovely couch covered that spill up in no time at all! Good thing we're moving out of this apartment!
i'm so bad about cooking meals too! this food blog has helped me get a little more excited about cooking: http://rhodeygirltests.com/recipes/
